Blogmas: Christmas Treats

From Thanksgiving to New Years, we are surrounded by food. A cringe-worthy thought is me cooking, but yesterday I successfully made fudge. Granted, it was a Carnation fudge kit with very detailed instructions, but I pulled myself together enough to turn on follow through. Which brings me to the point of this post: Christmas treats.



Honestly, who doesn't love fudge? If you aren't really that into cooking, don't make it homemade, get a kit like I did. It took about 15 minutes to get everything mixed, and took 2 hours to set. In other words, do something productive for 15 minutes, take a 2 hour nap, and when you wake up, you've got delicious fudge to eat whilst watching some Netflix!




Another cute, and edible, gift idea is sugar cookies. A few weeks ago I made some peppermint sugar cookies that actually weren't bad. Cookies are for every occasion, mostly because they are easily customizable. But sugar cookies hold a special place in my heart, right below oatmeal raisin.

There are practically endless options for Christmas treats. And Pinterest is the best place to find a variety of simple recipes. Whether you make them simple and sweet or detailed and delicious, your desserts will be delectable.

Blogmas: Peppermint Pancakes


December is the month of peppermint. Peppermint mochas, peppermint bark, even peppermint fudge! But today I'm going to share one of my holiday ideas: peppermint pancakes. The best breakfast has to be pancakes. Especially during the colder months, pancakes serve as a delicious and warm way to start your day off. But by adding peppermint, it's like you've invented a new food! Peppermint literally goes with anything, so it seems only logical to put it in pancakes.

Ingredients
1 1/2 cups all purpose flour
3 1/2 tsp baking powder
1 tsp salt
1 tbsp white sugar
1 1/4 cups milk
1 egg
3 tbsp butter, melted
*1 tsp peppermint extract
*4 mini/ 2 large candy canes, crushed and divided
(You can make this using a pancake mix, just add the ingredients with "*")


Instructions
1. In a large bowl, mix dry ingredients.
2. In a separate bowl, whisk egg until fully beaten, add milk, and mix together.
3. Combine the egg, milk, and melted butter to the dry ingredients.
4. Add 1/2 of the crushed candy canes. (Do not overmix, there will be lumps)
5. In a well oiled pan, add the batter.
6. When you begin to see bubbles on the pancake, flip.
7. After flipping, add crushed peppermint to the top of the pancake as it is still cooking.
8. Serve warm with any toppings: syrup, chocolate sauce, white choc. chips, nuts, etc.
